
So the kids and I were at the library the other day. They were playing while I was glancing through a magazine and there I saw it: a recipe for chocolate cherry bread. I almost screamed out loud. I immediately copied it and bought cherries soon after to make it. I was so so excited to have found that recipe that I went searching for our delicious blueberry raspberry bread and I found it! I was so so so excited! Since then, I've made multiple loaves of each and they are very close in deliciousness (is that a word?) to the Great Harvest bread. So anyways, I thought I would share with any bread lovers out there our recipes.
I couldn't find the recipe online for chocolate cherry so, ugh, I'm going to have to type it. Forgive the long post.
2 c whole wheat flour
1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/4 c unsweetened cocoa powder
1/4 c canola oil
1/4 c unsweetened applesauce
1/2 c brown sugar
1 T white vinegar
1 c minus 1 T skim milk
2 large eggs
1 t vanilla extract
1 c fresh cherries, pitted and chopped, or 1/2 c dried cherries
1/3 c semisweet mini choc chips
1/3 c sliced almonds
Grease bread pan. Mix flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
Mix oil, applesauce, and sugar. Beat one minute. Place vinegar in 1 cup measuring cup. Fill with milk. Add milk, eggs, and vanilla extract to bowl.
Beat 1 minute. Add flour mixture. Beat on low speed just until ingredients are moistened, about 15 seconds. Add cherries, choc chips, and almonds. Stir to blend. Pour mixture into loaf pan.
Bake 55 mins at 350. Cool 10 mins.
